These sticky, nutty peanut butter bars are only 175 calories each and are so simple to make!
We recommend you use a light peanut butter to cut out some of the fat and to cut down on calories (remember there are twice as many calories in fats than sugars). This recipe does call for a fair amount of sugar – you will see that we need it here for the caramel crunch!
For the peanut butter bars:
Here we go! Melt your peanut butter, sugar, honey and vanilla on a moderate heat. Keep stirring so it doesn’t stick. We want a caramel consistency with no visible sugar crystals. Remove from the heat.
Stir in your puffed rice so it’s fully coated with the caramel mixture. Press into a small square tin or dish and chill for 15 minutes.
Cut into squares and serve – easy peasy!
P.S. Top tip: Use silicone to stop any of the peanut butter caramel mixture from sticking to your saucepan. Silicone can withstand a temperature of 240°c and super easy to clean.
