These delicious bite sized serving suggestions are the perfect way for everyone to join in the festive celebrations.

From veggie burger sliders to a real throwback to the 70’s prawn cocktail, we have compiled our favourite, healthy, and easy canpés to bring some sparkle to any festive get-together. All of these are well known and much-loved creations but all with a little extra twist to make them perfect for everyone to enjoy.

Ingredients

For the veggie burger sliders

  • mini burger buns
  • low fat blue cheese
  • cranberry sauce

For mini Italian potato blinis

  • use our potato pancake recipe cut down into miniature portions : https://www.mariellas.co.uk/recipes/savoury-potato-pancakes/
  • fresh cherry plum tomatoes sliced
  • handful of fresh basil
  • black olives chopped
  • balsamic vinegar
  • olive oil
  • salt and pepper

For the salmon and seed bites

  • mixture of seeds such as pumpkin seeds, flax seeds, sesame seeds
  • chia seeds
  • nutritional yeast
  • smoked salmon
  • reduced fat soft cheese
  • chopped chives
  • chopped fresh dill
  • salt and pepper

For the retro prawn cocktail

  • Cooked and peeled prawns
  • slices of avocado
  • slices of cucumber
  • your favourite low fat thousand island dressing
  • shot glasses to serve

Instructions

Step 1:

For the mini veggie burger sliders:

  • Follow the link for our beetroot and almond burger recipe or use your favourite home-made veggie burgers cut down into smaller portions: https://www.mariellas.co.uk/recipes/beetroot-and-almond-burgers/
  • Portion and fry in a small amount of oil, making sure not to be too eager to flip them over till the bottoms are fully cooked, this stops them from sticking to the pan and falling apart.
  • Layer in mini burger buns with a small amount of low-fat blue cheese and cranberry sauce for that festive flavours combo.
  • For an extra flourish secure with mini bamboo skewers and serve to all your admiring guests

 

Step 2:

For the Italian potato blinis:

  • Use our savoury potato pancake recipe but in smaller bitesize portions: https://www.mariellas.co.uk/recipes/savoury-potato-pancakes/
  • Chop the tomatoes and olives into small pieces and place them in a bowl. Tear the basil into small pieces and add to the tomato and olive mixture
  • Drizzle a small amount of balsamic vinegar and olive oil over this and season with salt and pepper. Mix thoroughly.
  • Allow the potato blinis to cool fully then place a small amount of the tomato mixture on top of each one and garnish with a little more basil- Bellissimo!

Step 3:

For the salmon and seed bites:

  • Mix together all the seeds including the chia seeds and cover with lukewarm water. Mix thoroughly and allow to stand for at least ten minutes, the longer the better.
  • Once the mixture has absorbed the water and gelled together add some nutritional yeast and then spread a thin layer on parchment paper on a baking tray.
  • Bake until crisp through.
  • In a bowl mix together the reduced fat soft cheese and herbs with salt and pepper
  • Break the seed thins into small canapé sizes and top with the herb cheese mixture and a small slice of smoked salmon.
  • Garnish with chives and serve.

Step 4:

For the retro prawn cocktail:

  • Take a shot glass and add your favourite low cal thousand island dressing. There are many varieties available to purchase but why not try concocting your own from a base of 0%fat greek yoghurt, mayo, smoked paprika, lemon juice and chopped pickled gherkins.
  • Slice avocado and cucumber into strips and stand upright in the glass and then top with a couple of cooked shelled prawns.
  • Sprinkle with a little smoked paprika and serve. Enjoy x
