Alternative “Toffee” Apple Recipe

As Halloween approaches, we may see ourselves doing things a little differently this year.

So why not try out some healthy alternatives at home starting with an alternative toffee apple recipe…

Ingredients

For the apples:

  • Use firm apples like Granny Smith
  • You will also need round lollipop sticks for making up

For the "toffee":

  • Roughly 9 medjool dates - without stones
  • About 2 heaped tablespoons of coconut oil
  • Vanilla essence
  • Ground cinnamon
  • Toasted nuts (optional) - try chopped hazelnuts, chopped pistachios, or chopped pecans

Instructions

Step 1:

Start by placing a lollipop stick in each apple at the stem end and place on a tray covered with greaseproof paper.

Step 2:

Toast your choice of chopped nuts and set aside.

Step 3:

Blitz the dates in a little boiling water with the coconut oil, add a pinch of ground cinnamon and small amount of vanilla essence and combine to form a paste.

Step 4:

You can either spread on or dip the apple in this paste to cover each one with an even coating.

Step 5:

Roll half each apple in the toasted chopped nuts, then stand on the tray and refrigerate till set.
