Frankie Squares are great to make with the kids for Halloween.

As we know, marshmallows are low in calories but high in sugar, so we’ve used puffed rice and dark chocolate to reduce the overall sweetness but you could use Rice Krispies and milk chocolate if you’re feeling devilish… Happy Halloween! 🎃👻 Post your pictures on Instagram with the hashtag #skinnybakeryrecipe and we will mention you in our stories.

Ingredients

For the squares:

  • 20g butter
  • 280g marshmallows
  • 1/2 tsp high quality vanilla essence
  • a whole lot of green food colour
  • 150g puffed rice

For the decoration:

  • dark chocolate, melted
  • 24 mini marshmallows reserved
  • chocolate chips

Instructions

Step 1:

On a low heat melt the butter, vanilla and marshmallows in a saucepan. Add enough green colour to make it bright green (you may need more than you think).

Step 2:

Turn off the heat and add the puffed rice, coating it in the green slime.

Step 3:

Press your mix into a 20x30cm tray. Refrigerate for an hour and then cut into 12. You can trim the edges off if you want it to be perfect.

Step 4:

Dunk Frankie’s head into melted chocolate. Using a piping bag and nozzle, pipe melted chocolate to create his mouth. “Glue” (with melted chocolate, not actual glue) mini marshmallows on to create the eyeballs and stick on a chocolate chip for his pupil.

P.S. Top tip: Don’t make these ahead of time as they go a bit soft. If you wan them nice and crunchy, make them the day you want to eat them.
